Pork

At SRBailey Farm, we raise and sell pork from Kunekune pigs, a heritage breed from New Zealand. Our pigs are pasture raised with minimal grain. Not antibiotics or vaccinations are given. Please be aware that Kunekune pigs are smaller than market hogs so their cuts will be smaller than what you normally see in the store. They are also a lard breed, so there will be an abundance of fat to render into lard. KuneKune pork is rich and marbled. KuneKune's are slow to mature but they produce flavorful pork.

Our pork pricing is broken down into two parts: the hanging weight cost and the processing fee.

We charge per pound based on hanging weight this includes the price of the pig and transporting of the pig to the butcher. It does not include processing fee. Check with us on the current market price per pound hanging weight. The hanging weight refers to the weight of the pig after scald and scrape, head on, insides removed. Hanging weight is approximately 72% of the live weight. You will receive approximately 67% of the hanging weight as final cuts of meat - or 48% of live weight. Unless you specifically request organs, fat, and bones, they will not be included in the final cuts; organs based on availability when purchasing half pork. We will provide an estimate of or the processor reported live weight of the pig so you can estimate both hanging and final yield weights.

The processing fee is the cost of the butcher's work. The processing fee is determined by the butcher once the pork is complete and is dependent on the weight of the pig, the weight of the meat, smoking, curing, and sausage options (prices for different options are on the cut sheet for the processor). For a 200 Ib. pig, the processing fee can range from 125.00-200.00 for half pig and 250.00-400.00 for whole pig.

Pork processing takes approximately 2 to 3 weeks to complete from the butcher date. We will notify you when the order is ready.

We will send the remaining balance invoice once your pork is complete and the butcher notifies us of the processing cost. Customers are required to pay the remaining balance when notified of final cost and prior to taking possession of the pork. We accept payment through Zelle, Apple Pay, or cash/check.

Goat

Goat meat is a leaner, healthy alternative to beef and chicken. It has less calories per portion and a heart-healthy alternative due to lower saturated fat and cholesterol while still providing iron and plenty of protein. Our goats are pasture-raised with minimal grain.

We charge per pound based on hanging weight. This includes the price of the goat, transporting of the goat to the butcher, and the cost of processing. Check with us for the current price per pound. The hanging weight refers to the weight of the goat minus the head, hide, and entrails. Hanging weight is approximately 70% of the live weight. You will receive approximately 65% of the hanging weight as final cuts of meat - or 40-50% of live weight. Our experience has been close to 50% final yield from live weight including organs and bones. Myotonic goats have a higher meat to bone ratio than other goat breeds. Therefore, yeild estimates for generic goats and other breeds will tend to be lower than expected for our myotonic goats. Unless you specifically request organs and bones, they will not be included in the final cuts; organs based on availability when purchasing half goat. We will provide an estimate of or the processor reported live weight of the goat so you can estimate both hanging and final yield weights. Although many processors provide a fixed packe for goats (single fee), they will report the hanging weight.

Goat meat processing takes approximately 2 to 3 weeks to complete from the butcher date. We will notify you when the order is ready.

Chicken

Our first crop of Cornish Cross Chickens was harvested on June 6 and 15. We processed a total of 23 chickens - ranging from 6.5 Ibs to 8.3 Ibs. Our next crop of Cornish Cross Chickens will be in November. Contact us for further information and to reserve.

Our pasture-raised chickens are healthier than chicken that is not pasture raised. It has less fat, making the meat healthier. Pasture-raised chicken meat is also higher in iron, Omega 3, and in antioxidants. Pasture-raised eggs also have higher Omega 3s, more vitamin D, and more antioxidants.
